Do you remember the Russian pie? She is a dessert classic and a regular at many family parties and grandparents' birthdays. This sweet pie is very easy to make and practical, much like the German pave.  we didn't find the origin of the Russian pie, but one thing is certain: it's a delicious dessert even for the weekend!

In addition to the usual ingredients of biscuit and chocolate pavé, there is also egg (white yolks), sugar, coconut fat and chopped walnuts. The recipe is original from the book 'Receitas de Yayá Ribeiro', by Célia Ribeiro and, in case you want to make a replacement, below we indicate some possibilities.

Ingredients for making original Russian pie:

 1 packet of Maria biscuit (200 g)

 ½ kilogram of powdered chocolate

 ½ kilogram of coconut fat

 ½ kilogram of chopped walnuts

 1 cup of sugar (200 ml cup)

 9 eggs

How to Make Original Russian Pie:

Separate the whites from the yolks and beat the whites in snow until they are very consistent. While beating add the yolks one by one and continue beating until well incorporated.

Tip: To get more consistent and quickly grown whites, beat them with a pinch of salt or a few drops of lemon juice.

Add the sifted chocolate (to avoid lumps), sugar, the cold melted coconut fat and, finally, the chopped walnuts. Wrap everything very well and gently, so as not to lose the air in the egg whites.

Tip: If you want you can replace the coconut fat with butter or margarine.

On a greased platter, place a layer of cream on top, cover with a layer of Maria biscuit, repeat another layer of cream and so on - the last layer should be cream. Store in refrigerator for at least 2 hours.

Tip: In the original recipe, the Russian pie is mounted in a cardboard box lined with waxed paper.
